Laal maas, the signature

The dish everyone comes for — a fiery mutton curry stained red with Mathania chillies, slow-cooked until the meat falls apart. We can dial the heat to your taste, but a little fire is the point.

Dal baati churma

Baked wheat baati cracked open over ghee, with dal and a sweet, crumbly churma alongside — comfort food that tells the story of the desert in a single plate.
